Cooking Pumpkin Gosht with Desi Ghee Parathas for My Samdhan’s Family 🫓




INGREDIENTS,

Meat ; 1 1/2 kg.
Pumpkin; peeled and cut in small chunks; 2 kg.
Onions; medium 2.
Tomatoes medium 2
Ginger garlic paste; 2tbs
Coriander(dhania) powder 2 tsp
Cumin(zeera) powder 2tsp
Salt to taste.
Red chilli; 1 1/2 tsp.
Haldi(turmeric) 1/2 tsp.
Ghee 200grams.
Fresh dhania and green chilli, for garnish.

METHOD;

In a cooker add meat, chopped onion, tomatoes, ginger garlic paste and all the spices, and add 3 cups of water,
Cook till the meat is 80% tender and water is dry.
Add desi ghee and cook on medium low flame for 5 to 10 mins.
In a separate pan boil pumpkin and strain.
Add pumpkin to the meat and cook well mixing and mashing pumpkin.
When mixed well and mashed, andghee is separate on the sides,
Garnish with greens.

To start off, I gathered all the necessary ingredients, including a fresh pumpkin, bone-in meat, onions, tomatoes, ginger, garlic, and a blend of spices. I began by sautéing the onions, ginger, and garlic in a generous amount of Desi Ghee, which not only adds a rich flavor to the dish but also enhances its overall taste.

After the onions turned golden brown, I added the meat and let it cook until it was tender and succulent. Then, I added the diced pumpkin and tomatoes, allowing them to simmer and meld together with the spices. The vibrant colors and fragrant aroma filled the kitchen, creating an inviting and comforting ambiance.

As the Paitha Gosht simmered on the stove, I prepared the Desi Ghee ke Parathey, a traditional flatbread made with whole wheat flour and ghee. I kneaded the dough with a dollop of ghee, rolled it out into thin circles, and then cooked them on a hot griddle until they puffed up and turned golden brown. The ghee imparted a rich and buttery flavor to the parathey, making them a perfect accompaniment to the savory Paitha Gosht.

Once everything was ready, I served the Paitha Gosht with a side of Desi Ghee ke Parathey to my Samdhan’s family. The hearty and comforting meal was a hit, and they savored every bite with delight.
