I have an iron disorder and have to eat foods that are not fortified. A simple thing we do is by big bags of peas, green beans or whatever that is frozen at the grocery store. Thaw them, put them in ball canning jars and pressure can them per the pressure canning recommendations. Mrs Stacy you should look at pressure canning tomatoes. It's literally the fastest thing we can. Chop them up, squish em, put em in the jars, toss in canner. When I was a kid we used the water bath method and it was a lot of work for sure. Glad you're feeling better. Y'all keep bringing the news!!
