3 ea bread slices
2/3 cup chicken broth, low sodium :
1 lb Mexican pork chorizo
1/2 lb ground pork
1/2 white onion
1/4 bunch cilantro
1 tsp ground garlic :
1/2 tsp ground cumin :
1 1/2 tsp Mexican dry oregano :
2 ea eggs
Salt, as desired :
Black pepper, as desired :

☞ Chipotle orange glaze
3/4 cup orange juice, freshly squeezed
1 tsp ground chipotle :
3 TBSP golden sugar (I’m using a sugar alternative)
1/4 cup apple cider vinegar :
Salt to taste (1/2 tsp kosher)

Chopped cilantro- garnish

4 cups cooked chicken, shredded
1/2 white onion
1 ea tomato
1 tsp guajillo, ground :
1 tsp paprika, smoked :
1/2 tsp garlic, ground :
1/2 tsp ground cumin :
1/2 cup sour cream
1/4 cup mayonnaise :
Salt to taste :

8 oz cheddar
12 oz oaxaca cheese
12 ea flour tortillas, medium size

    I've so got to try them meatballs.
    I know it's completely different, but have you tried Thai pork meatballs? So simple, 2tbsp Thai red curry paste, 2tbsp fish sauce, 2tbsp honey, and 500g of pork mince. Mmmmm!!
